Vegetarian Omelette with Cotija Cheese

I had not made an omelette in a long time, and this time, I decided to challenge myself with something healthy and vegetarian, while using a Hispanic Real California Milk dairy product: cotija cheese!  Please enjoy my very own vegetarian omelette recipe!

Vegetarian Omelette with Cotija Cheese

 

You will need:

2 tablespoons oil

1 jalapeno, thinly sliced

½ cup diced onion (about ½ an onion)

½ cup diced mushroom

1 tablespoon minced garlic

4 eggs, whisked

Crumbled cotija cheese

 

Prep Time: 30 min. Serves 2.

 

1. Heat oil in a pan over medium pan.  Add onion, jalapeno, and mushrooms and saute for 3 minutes.  Add the garlic and saute for 3 more minutes.  Turn down the heat and transfer the mixture to a plate and set aside.

2. Return the heat to medium and add more oil, if needed.  Pour the whisked egg into the pan and cook for 2-3 minutes until the egg sets, or until the bottom of the egg is golden.

3. Turn off the heat and add the onion mixture and cotija cheese to one half of the egg.  Fold the omelette in half.  Garnish with more cheese and enjoy!
