Grapefruit Mint Mojito

It’s been a while since I posted a recipe on the blog! Plants.com recently sent me some herbs to promote cooking with plants. This is the recipe I came up with. I made a Grapefruit Mint Mojito. Enjoy!

Grapefruit Mint Mojito

You will need:
1/4 pink or red grapefruit, cut into small chunks, seeds removed
2 tbsp lime juice
2 tbsp honey
12 mint leaves
2 oz vodka or white rum*
4 oz grapefruit juice
Ice cubes
Grapefruit flavored sparkling water or club soda
Mint sprigs, for garnish
Grapefruit wedges and mint leaves, for garnish

*If you wish to make this without alcohol, you may use 6 oz of grapefruit juice in total (juice from about 1/2 of a grapefruit)
Prep time: 5 minutes. Serves 2.

1. Add the grapefruit pieces, lime juice, honey, and mint leaves into a cocktail shaker. Muddle to release the flavors.
2. Add vodka (or white rum) and grapefruit juice. Fill with ice and shake.
3. Strain into 2 ice-filled cocktail glasses and top with grapefruit flavored sparkling water.
4. Garnish with grapefruit wedges and mint leaves. Makes two servings.
