I was craving an omelette so I used ingredients from Milk and Eggs to create this amazing breakfast! I adapted the recipe from here: https://www.realsimple.com/food-recipes/browse-all-recipes/sausage-pepper-cheddar-omelet
Sausage, Pepper, and Cheddar Omelet
You will need:
2 tablespoon olive oil
½ red or green bell pepper, diced
3 breakfast sausage links, thawed and diced
2 large eggs, beaten
1 oz. cheddar cheese
Blueberries and raspberries
Chives and mint (for garnish)
Prep time: 10 minutes. Serves 1.
1. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add in the pepper and stir fry for 2 to 3 minutes. Add in the sausage and stir fry for an additional 2 minutes. Set the sausage mixture aside.
2. Add in the second tablespoon of oil over low heat. Then add the eggs and cook, stirring and tilting the pan until set, for about 3 minutes.
3. Sprinkle the cheddar cheese on top of the eggs. Add in the sausage mixture to one side of the eggs. Fold the other side over the filling and serve with berries and garnish.
