Pink Pitaya (Dragonfruit) Smoothie Bowl

After receiving a box of fan favorites from Suncore Foods, I knew I had to make something fun and creative! I had never made a smoothie or a smoothie bowl before, so I researched the general anatomy of a smoothie and decided to try my hand at creating and garnishing this smoothie bowl!

Pink Pitaya (Dragonfruit) Smoothie Bowl

You will need:

2 tbsp Suncore Foods Pink Pitaya
¼ cup almond milk
½ cup vanilla Greek yogurt
2 cups frozen fruit (I used a tropical blend)


For toppings:

Blueberries
Raspberries
Kiwi, sliced
Mango, cubed
Suncore Foods Goji Berries
Suncore Foods Cacao Nibs
Suncore Foods White Pitaya Dragon Fruit Chips, broken into small pieces
Suncore Foods Quinoa Snow Flakes

Prep time: Less than 10 minutes. Serves 2.

1. Place the pitaya powder, milk, and yogurt into the blender.

2. Add the fruits into the blender and blend until you reach the desired texture. Make adjustments as needed.*

3. Pour smoothie into a bowl. Add the toppings, and enjoy!


*From my extensive research on smoothies, you may add milk or coconut water to the smoothie if it’s too thick, or add ice, fruit or yogurt if it’s too runny.
